My training started when I was a little girl, walking in the woods with my favorite Idol times: My dad. For he was the first to introduce me to the wonders of the wild(foods), I have fond memories of foraging for chestnuts on drowsy days, the excitement of catapulting them from the tree and eat, right then and there. We made rosehipjam from the reships from the community garden and blackberry jam from the nearby nature. The magic stayed with me yet grew dormant when I left the natural area I lived in as well as my won nature for a while. Yet I came back, to my own nature and my fierce love for nature…
I began adding in more and more wild edibles since about three years ago, it has been a wild ride from there and I have been doing tons of research in books as well as in the field and joined the lovely and extensive urban herbology course of Lynn Shore. There seems to be no ending to the wonders and the powers of the wild nature. I feel blessed and inspired everyday, to dive deeper and share the wonders I have discovered along
RAW VEGAN (UN)COOKING
I am as they call an autodidact. I told myself how to cook and I always cook, or uncook, intuitively. What that means is that I never use recipes and what I make I never truly make twice.
The healthier I wanted to eat, the less packaged remade stuff I bought, the more I cooked for myself and found out how much I love to feed others. This love has always been there, as I loved to bake when I was a little girl yet somehow outgrew it with my unhealthy eating habits. I do, however, have a grade in international hotel management. Where my two favorite weeks of that whole 4-year course was by far: my two weeks of running the kitchen and rocking it with my very own menu.
I got some basic kitchen training during my studies yet I learned mostly trough doing. Working at several raw vegan places:
Alchemist garden in Amsterdam , from making the specials on the menu to catering
Cold Pressed Juicery Amsterdam, optimizing current recipes to diminish food waste and added some new recipes to their repertoire
Yay Amsterdam – setting up a brand new raw vegan kitchen, designing the menu, recipes, staff training, contact suppliers, you name it
Starting for myself – Slowly but surely I started working more for myself, in my own pace, where I can let my inspiration flow most freely. Cooking for events, making raw pies on festivals, for restaurants and yoga schools, giving some workshops and cooking on retreats.
my way, with all of you.
